Our Mushrooms — Lion's Mane and Chaga

Every Mariko Grove blend starts with two ingredients we chose carefully: Lion's Mane and Chaga. Here's what they are, where they come from, and why we use them.


Lion's Mane (Hericium erinaceus)

What It Is

Lion's Mane is a white, shaggy mushroom that looks nothing like a typical mushroom. Instead of a cap and stem, it grows as a single clump of long, cascading spines — sometimes compared to a waterfall or a lion's mane. It fruits on hardwood trees (beech, maple, oak) in late summer and autumn across North America, Europe, and Asia.

Its Japanese name is yamabushitake, after the yamabushi mountain monks of the Shugendo tradition, who are said to have brewed it as a tea during meditation.

A Long History

Lion's Mane has been documented in Chinese texts since the Sui Dynasty (581–618 CE), where it was prepared as a soup and valued as a tonic. Buddhist monks used it in powdered form. Across East Asia, it has been part of culinary and traditional wellness practices for centuries — not as a medicine, but as a food with purpose.

What's Inside

Lion's Mane contains several classes of bioactive compounds that researchers have identified and documented:

  • Hericenones (A–H) — aromatic compounds found primarily in the fruiting body. These are benzaldehyde derivatives with fatty acid chains.
  • Erinacines (A–K, P–S) — cyathin diterpenoids found primarily in the mycelium. Fifteen have been identified to date.
  • Beta-glucans — high-molecular-weight polysaccharides present in the mushroom's cell walls.
  • Amino acids — including glutamic and aspartic acids, which give Lion's Mane its subtle umami character.

How It Tastes

On its own, Lion's Mane is mild, slightly sweet, and savory with faint nutty notes. Some describe a subtle seafood-like quality (it's often compared to crab or lobster when cooked whole). In coffee blends, it adds a neutral, earthy body without bitterness — you won't taste "mushroom."


Chaga (Inonotus obliquus)

What It Is

Chaga isn't a mushroom in the way most people picture one. It's a parasitic fungus that grows as a dark, irregular, charcoal-like mass — called a conk or sclerotium — on the trunks of living birch trees in cold-climate forests. The exterior is black and deeply cracked. The interior is golden-brown.

A single Chaga conk can grow for 10 to 20 years on its host tree. It reproduces only once — when the host tree dies and the fungus produces a short-lived fertile structure to release spores. It cannot be "re-harvested" from the same tree indefinitely, which makes sourcing a matter of care.

A Long History

Chaga's earliest documented use dates to the 12th century among the Khanty people of Western Siberia, who brewed it as tea. The word "chaga" itself comes from old Russian via Komi-Permyak, the language of indigenous peoples near the Ural Mountains. By the 16th century, it appeared in Russian and Northern European folk texts. Scandinavian and North American indigenous peoples also have documented histories of use.

In 1955, Russia officially recognized Chaga as a registered substance. Aleksandr Solzhenitsyn's 1968 novel Cancer Ward introduced it to Western audiences, and interest has grown steadily since.

What's Inside

Over 250 secondary metabolites have been identified in Chaga. The most discussed:

  • Beta-glucans — polysaccharides with a backbone of glucose units linked by beta-glycosidic bonds. These are the primary compound of interest in most functional mushroom products.
  • Melanin — the pigment responsible for Chaga's distinctive black exterior. Chaga is one of the most melanin-dense natural substances known.
  • Betulinic acid — a pentacyclic triterpene derived from betulin, which Chaga absorbs from its birch host. This compound is unique to wild-harvested Chaga and absent from grain-cultivated versions.
  • Triterpenoids — including inotodiol and lanosterol.
  • Polyphenols — including vanillic acid, contributing to Chaga's antioxidant activity profile.

How It Tastes

Chaga has an earthy, mildly bitter flavor with notes often compared to coffee and dark tea. Many people pick up subtle vanilla and caramel undertones — attributed to compounds absorbed from the birch host. There's a light smokiness. In coffee blends, Chaga adds umami depth and mellows perceived acidity without changing the fundamental coffee flavor.


Why These Two Together

We chose Lion's Mane and Chaga — and only these two — for our launch blends. Not because more mushrooms would be better, but because we wanted to do two well rather than six halfway.

They complement each other:

  • Flavor balance — Lion's Mane is neutral and savory; Chaga is earthy with vanilla undertones. Together they round out coffee's natural acidity and bitterness without adding any "mushroom" taste.
  • Different compound profiles — Lion's Mane is rich in hericenones and erinacines. Chaga brings beta-glucans, melanin, and betulinic acid. Different mushrooms contribute different things.
  • Broad polysaccharide range — Each species produces its own spectrum of beta-glucans and polysaccharides. Using two species means a wider nutritional variety than either alone.

What's in Our Blend — Mycelium, Fruiting Body, and Why We're Transparent

Mushroom products vary widely in what's actually inside. The two main forms are:

Fruiting Body

The visible, mature structure of the mushroom — the part you'd recognize growing on a tree or in the forest. It contains the highest concentration of beta-glucans and, in Lion's Mane, the hericenone compounds.

Mycelium

The root-like network that grows through a substrate. In commercial production, mycelium is typically grown on grain (rice, oats, or similar). Mycelium contains its own bioactive compounds — in Lion's Mane, these include erinacines, which are found primarily in the mycelium rather than the fruiting body.

What Mariko Grove Uses

Our Lion's Mane is a blend of mycelium and fruiting body, cultivated on organic oats. Our Chaga is included alongside it. We chose this format because it includes compounds from both growth stages — hericenones from the fruiting body and erinacines from the mycelium.

We know some brands position "fruiting body only" as the gold standard. We'd rather be straightforward about what's in the bag and let you decide. Every batch is third-party tested for heavy metals, mycotoxins, mold, and yeast.


Extraction — Getting the Good Stuff Out

Mushroom cell walls are made of chitin — the same tough material in crab shells. Your body can't break chitin down efficiently on its own, which means eating raw mushroom powder doesn't give you access to most of the compounds inside. Extraction is what makes the difference.

  • Hot water extraction dissolves water-soluble compounds: beta-glucans, polysaccharides, and polyphenols.
  • Alcohol (ethanol) extraction dissolves non-water-soluble compounds: triterpenes, sterols, hericenones, and betulinic acid.
  • Dual extraction combines both methods sequentially, capturing the full spectrum of both water-soluble and alcohol-soluble compounds.

Frequently Asked Questions

Does Mariko Grove coffee taste like mushrooms?

No. Both Lion's Mane and Chaga have mild, neutral flavor profiles that integrate into coffee rather than standing out. Our ground coffee tastes like dark chocolate and toasted nuts. Our instant tastes like toasted almond with a soft toffee finish. The mushrooms round out the flavor — they don't take it over.

How much Lion's Mane and Chaga is in each serving?

Our ground coffee contains 500mg Lion's Mane and 500mg Chaga per serving (1 tbsp / 10g). Our instant coffee contains 150mg Lion's Mane and 150mg Chaga per serving (1 tsp / 3g). Blend ratio: 90% coffee, 5% Lion's Mane, 5% Chaga by weight.

Where do you source your mushrooms?

Our Lion's Mane is a mycelium and fruiting body blend cultivated on organic oats. We work with a U.S.-based production partner, and sourcing details are available on request.

Are your mushroom extracts tested?

What about Reishi, Cordyceps, Turkey Tail, and other mushrooms?

We started with Lion's Mane and Chaga because we wanted to do two species well. We may expand our ingredient list in the future, but only when we've found sourcing and extraction quality we're confident in.

Is mushroom coffee safe to drink every day?

Many customers make Mariko Grove their daily coffee. That said, if you're on blood-thinning medication, managing blood sugar, have a history of kidney stones, or have an autoimmune condition, talk to your doctor before adding functional mushrooms to your routine. If you're pregnant or breastfeeding, we recommend avoiding mushroom supplements until more safety data is available.

What's the difference between your mushroom coffee and a mushroom supplement?

Mariko Grove is coffee first — real Arabica coffee blended with mushroom extracts. It's designed to be your daily cup, not a capsule or tincture. The mushrooms are an ingredient in a product you already enjoy, not a standalone supplement.
