Fruiting Body vs Mycelium: The Honest Answer

Here's the answer most mushroom coffee brands won't give you straight: "fruiting body only" is a marketing slogan, not a quality guarantee. The part of the mushroom in your cup matters far less than two things you can actually verify: how much real mushroom is in there, and whether the brand tells you plainly what's in it.
The fruiting body and the mycelium are different parts of the same organism, and both carry legitimate compounds. The genuine problem in this industry isn't "mycelium bad, fruiting body good." It's that a slogan on the front of a bag tells you nothing about the amounts inside or how it was grown. This article gives you the honest version: what these parts actually are, where the "fruiting body only" critique is right, where it oversimplifies, and how to read a label so you can judge for yourself.
What Are the Fruiting Body and the Mycelium?
The fruiting body is the visible, mature mushroom: the cap, stem, and pores or gills you'd recognize growing on a tree. The mycelium is the root-like network of thread-like filaments (hyphae) that grows through whatever the fungus feeds on. Both are real parts of the same organism.
The distinction that matters in supplements is how the mycelium is grown. The most common method is mycelium-on-grain (MOG): sterilized grain (usually rice, oats, or sorghum) is inoculated with the fungus, the mycelium colonizes the grain over a few weeks, and then the entire mass, grain and all, is dried and ground into powder. The catch is that the mycelium can't be cleanly separated from the grain it grew on, so the final powder is a mixture of fungal material and grain.
Where the "Fruiting Body Only" Critique Is Right
The critique has a real point, and we're not going to pretend otherwise: some mycelium-on-grain products are mostly grain, with very little actual mushroom in them.
Independent analysis backs this up. According to Nammex, the supplier whose founder, Jeff Chilton, helped pioneer beta-glucan testing in this industry, quality fruiting body extracts typically test at 20 to 40% or more beta-glucan, while many MOG products test below 10%, with some showing as little as 1 to 5% beta-glucan and 35 to 50% or more starch. At that point, the nutritional profile essentially tracks the grain it was grown on, not the mushroom.
There's a subtler trap, too, one that is especially worth understanding because it cuts against an easy "just look at the beta-glucan number" answer:
- Polysaccharide totals can be misleading. The standard polysaccharide test (the phenol-sulfuric acid method) measures all sugar-based molecules, including the alpha-glucans in grain starch, not just the fungal beta-glucans you actually want. A product can be mostly starch and still post an impressive "polysaccharide" number. The beta-glucan-specific assay (the Megazyme/AOAC method) is the meaningful measure.
- Oats carry their own beta-glucans. This is the part almost no one mentions: oats are naturally high in beta-glucan. But oat beta-glucans are structurally different molecules from mushroom beta-glucans: cereal beta-glucans are linear with 1,3 and 1,4 linkages, while mushroom beta-glucans are branched with 1,3 and 1,6 linkages (a distinction documented in peer-reviewed reviews of edible mushroom beta-glucans). On a grain-grown product, a beta-glucan figure can be lifted by the substrate's own glucans, not the fungus.
So the honest takeaway is twofold: yes, a lot of cheap MOG powder is mostly filler, and no, a single beta-glucan percentage isn't the clean proof of quality it's often sold as. Both of those are reasons to be skeptical of slogans, in either direction.
Where the Slogan Oversimplifies
The "fruiting body only" purity argument comes from the concentrated-extract supplement world: capsules and tinctures designed to deliver a high dose of specific compounds. A daily coffee is a different product with a different goal, and importing the supplement-world purity contest wholesale doesn't quite fit.
Two things the slogan tends to flatten:
- Mycelium is not worthless filler. The mycelium is a legitimate part of the organism and carries its own compounds. In Lion's Mane, for example, the erinacines are found primarily in the mycelium, while the hericenones concentrate in the fruiting body. Different parts contribute different things. Grain-free mycelium products exist and are well-researched, too; the much-studied CS-4 Cordyceps is a liquid-fermented mycelium, not a fruiting body.
- Using both can be a deliberate choice. Combining fruiting body and mycelium is a full-spectrum decision, capturing the compound range of both parts, not automatically a cost-cutting shortcut. The question isn't "which part?" so much as "how much real mushroom, and does the brand tell you?"

Here's the neutral, factual comparison: no invented figures, just what each is and how to spot it.

The Real Test Is Transparency
Here's the reframe that actually protects you as a buyer: a "fruiting body only" label with no disclosed amounts and no substrate disclosure guarantees nothing. Disclosure beats slogans, every time.
Think about what "fruiting body only" on a front label does not tell you: how many milligrams of mushroom are in a serving, what the extraction method was, what the beta-glucan content actually is, or whether the claim was ever independently verified. A brand can print "fruiting body" and still give you a tiny, unspecified amount. Meanwhile, a brand that openly lists its species, its amounts, and its growing method (mycelium, fruiting body, or both) is handing you the information you need to judge the product on its merits.
The useful question was never "which part of the mushroom?" It's "what exactly is in this, in what amount, and is the brand willing to tell me?"
How to Read a Mushroom Coffee Label
This is the part worth bookmarking. When you pick up any mushroom coffee, look for these four disclosures, in order of how much they tell you:
- Named species. The label should name the actual mushrooms (for example, Lion's Mane and Chaga), not just say "mushroom blend" or "functional mushrooms."
- Amount per serving. Look for milligram amounts per serving for each species. A single "proprietary blend" total you can't break down is a red flag; you can't tell how much of each mushroom you're getting.
- Part(s) and substrate. Does the brand say whether it uses fruiting body, mycelium, or both, and what the mycelium was grown on? Naming the substrate (grain, oats, hardwood) is a sign of a brand that isn't hiding anything. Silence on substrate is the real warning sign.
- What's actually tested. Third-party testing is valuable, but check what is being tested. Testing the roasted coffee for contaminants is a different thing from a guarantee of mushroom-extract potency. A trustworthy brand is precise about the scope of its testing rather than implying a single certificate proves everything.
Run any brand, including ours, through those four, and the marketing falls away pretty quickly.
What Mariko Grove Actually Uses
