The honest answer is: often slightly, but it depends far more on the roast, the brew method, and the blend than on the mushrooms themselves. There is no magic in a mushroom that neutralizes coffee acid. What actually happens is simpler, and once you understand it you can make almost any coffee taste less acidic, ours included.
A quick note before we start: this post is about acidity you can taste and measure, meaning pH and flavor. It is not about health effects, which vary from person to person and which we don't make claims about. The Short Answer
Most mushroom coffee is a little less acidic than a bright, light-roast regular coffee, for three reasons that have nothing to do with mushrooms being alkaline:
- Blend ratio. When mushroom extract makes up part of the cup, there is slightly less coffee per serving, so there is slightly less coffee acid per serving.
- Roast level. Most mushroom coffees, including ours, use a medium roast, and roasting degrades some of the acids found in the raw bean.
- Perceived smoothness. Medium-roast, earthy, lower-bitterness coffee reads as "smoother" on the palate, and people often describe smooth coffee as less acidic even when the pH is close.
Put simply: acidity is set by the bean, the roast, and the brew. Mushroom coffee tends to sit on the gentler end of that range, but a dark-roast regular coffee brewed as cold brew can easily be less acidic than a light-roast mushroom coffee. The category name is not the deciding factor.
What "Acidity" Actually Means in Coffee
The word "acidity" gets used two different ways, and mixing them up is where most of the confusion starts.
pH is the chemical measure. It runs from 0 (very acidic) to 14 (very alkaline), with 7 being neutral. Brewed coffee generally measures between a pH of about 4.85 and 5.10, which puts it in the mildly acidic range, roughly alongside a banana or a tomato. That range holds up across multiple studies (Rao and Fuller, 2018, Scientific Reports).
Tasted acidity is the bright, tangy, sometimes sour quality you notice on the front of your tongue, especially in light-roast and single-origin coffees. This is a flavor, and it does not track pH exactly. A coffee can taste quite bright while measuring a fairly ordinary pH.
This distinction matters because "less acidic" can mean "higher pH" or "tastes smoother," and the two don't always move together. Most people asking the question mean the second one: they want a cup that tastes rounder and less sharp.
What Actually Determines Coffee Acidity
Three things move the needle far more than whether mushrooms are in the cup.
1. The bean and its origin
Coffee naturally contains acids like chlorogenic, citric, and malic acid. Higher-grown beans and certain origins carry more of them, which is why some single-origin coffees taste vividly bright. The starting material sets the ceiling.
2. The roast level
Roasting breaks down many of the acids in the green bean. Longer, darker roasting degrades more of them, so darker roasts generally carry less measurable acid and taste mellower. Lighter roasts hold on to more citric, malic, and chlorogenic acid and taste noticeably brighter (Yeager et al., 2023, "Acids in brewed coffees"). Interestingly, the pH itself shifts only modestly across roast levels; it's the acid content and the perceived brightness that change the most.
3. The brew method
How you brew changes which acids end up in the cup and how many. The clearest example is cold brew. Because it steeps in cold water rather than hot, cold brew extracts fewer of the acids that hot water pulls out. Studies measuring total titratable acidity found cold brew consistently lower than hot brew of the same coffee, even when the pH readings were close (Rao and Fuller, 2018). Grind size, water temperature, and steep time all nudge it as well.

Here is roughly where common coffees land. Treat these as directional ranges, not precise product specs, since pH varies with bean, roast, brew, and even water.

If your goal is a smoother, less sharp cup, these are the levers that actually work, ranked roughly by how much they matter.

How to Make Any Coffee Taste Less Acidic
Whether you drink mushroom coffee or regular, these are the moves that genuinely smooth out a cup:
- Choose a medium or dark roast. This is the biggest single change you can make. Lighter roasts keep more acid; darker roasts shed it.
- Try cold brew. Steeping in cold water pulls fewer acids into the cup than hot brewing. Our brewing guide covers how to cold brew our ground blend.
- Don't over-extract. Water that is too hot or grounds that steep too long can taste sour. Aim for 195 to 205°F and follow the timing for your method.
- Add a splash of milk. It softens the perceived sharpness, even though it barely moves the actual pH.
- Use good water. Very soft or acidic water can accentuate a coffee's tang; filtered, balanced water gives a rounder cup.

If you have acid reflux or GERD, whether coffee works for you, and how much, is a question for your doctor rather than a coffee label.
What is the least acidic mushroom coffee?
There is no single "least acidic" brand, because roast level, brew method, and the coffee-to-mushroom ratio move measured acidity far more than the label does. As a rule of thumb, darker roasts and cold brewing test lower in acidity than light roasts and hot drip. If low acidity is your goal, choose a medium or dark roast and try cold brewing it, and keep in mind that most brands, ours included, do not publish a measured pH, so treat any "low acid" claim as a taste description rather than a lab number.
